How to Store Fresh Artisan Bread

One of the questions I hear most often is, "What's the best way to store fresh bread?"

Because our breads are made with organic ingredients and without artificial preservatives, they deserve a little extra care once they leave the bakery. The good news is that storing artisan bread is simple, and with the right method, you can enjoy every slice.

My Favorite Way to Store Fresh Bread

At home—and even when I'm at farmers markets—I use the same reusable bread bag because it has consistently kept my loaves fresh.

I've stored everything from sourdough to sandwich bread in these bags, and they have never let me down.

Should You Refrigerate Artisan Bread?

In most cases, I don't recommend it.

While refrigeration may seem like the best way to keep bread fresh, it actually causes bread to stale more quickly. The cooler temperature changes the structure of the starches, making the loaf become dry and firm sooner than if it had been stored at room temperature.

If your kitchen is especially warm or humid, refrigeration may help prevent mold, but for most homes, room temperature is the better choice.

How Long Does Sourdough Last?

One of the wonderful qualities of sourdough is its naturally longer shelf life.

When stored properly at room temperature, I typically enjoy my sourdough for up to a week. After that, it begins to lose its fresh texture and becomes noticeably staler.

Don't throw it away, though! Day-old sourdough makes incredible toast, croutons, breadcrumbs, grilled cheese sandwiches, and French toast.

Can You Freeze Fresh Bread?

Absolutely—and many of my customers do.

Several customers have shared that they freeze their loaves as soon as they get home. When they're ready for a slice, they simply thaw what they need or warm it up, and it tastes wonderfully fresh.

Freezing is the best option if you won't finish your loaf within several days.

For even more convenience, slice the loaf before freezing so you can take out only as many slices as you need.

A Few Simple Tips

  • Store bread at room temperature whenever possible.
  • Keep it in a quality bread bag or bread box.
  • Avoid the refrigerator unless your environment makes it necessary.
  • Freeze extra bread if you won't finish it within a few days.
  • Refresh a whole loaf by warming it in the oven for a few minutes to help restore its crust and aroma.
